Calorie count

As a Dietary Technician at Rose Medical Center I complete calorie count reports for patients who need to be monitored for malnutrition. I collect information on the food a patient has consumed the previous a day. I then create a report in Meditech (our EHR software) containing information on the calories and protein, oral supplements and food consumption per meal.

Low fiber diet patient education

As a Dietary Technician at Rose Medical Center I have had the opportunity to work with patients who have just had gastrointestinal surgery. I provide education on following a low fiber diet for the first few weeks following surgery. I discuss foods that are low or high in fiber and provide the patient with education handouts to take home.

Wound healing handout

I wrote the content and designed a patient education handout on nutrition tips to promote wound healing. It includes both foods and nutritional supplements that can support wound care. I worked with one of the RDN’s to review, edit and revise this handout to meet our patient’s needs.


Nutrition Services Department at Littleton Public Schools

Donation request outreach

As an intern for the Nutrition Services Department at Littleton Public Schools I created a process for getting school lunch raffle donations for the students from local businesses. I managed the donation outreach process from start to finish. I wrote a donation letter, reached out to contacts, tracked donations and receipt, as well as thanked donors.

Documenting nutrition information for school foods

I gathered all of the documentation needed for school food products being served in the district. I worked with the Assistant Director of the department to collect child nutrition (CN) labels or product formulation statements; ingredients lists; and nutritional information for every food product that was purchased.

Summer food service program

During my time volunteering as an intern with the Nutrition Services Department at Littleton Public Schools I prepared food, packed lunch bags and distributed meals to students from 22 bus stops in the district. I am pictured on the bus helping with the summer emergency feeding program in 2020 during the COVID-19 pandemic.

Social media calendar

I created a social media calendar with content for timely posts throughout the school year. I assisted with the marketing strategy for events throughout the summer and created a back to school campaign to promote school meals for the district. Pictured is an example of a post from our 100K summer school meal milestone during the COVID-19 pandemic in the summer of 2020.

Diabetes case study

For medical nutrition therapy I completed a case study on a hypothetical patient that received a recent diabetes diagnosis. The objective of this case study was to calculate anthropometric measurements; review bloodwork results; calculate calorie, protein and fluid needs; analyze the patient’s diet recall; write a PES statement; complete an assessment form and propose nutrition and lifestyle recommendations.

Female diabetics in our community

Our group to produced a semester long community nutrition project reviewing the current resources and gaps in support for female diabetics in the Denver metropolitan area. We presented a paper and final presentation. Those included a needs assessment through a literature review and survey; a logic model and nutrition education focused on our target population.

The aging adult case study

Our group completed a case study on a hypothetical elderly patient who was at risk of malnutrition. We used malnutrition screening tools (pictured); reviewed her diet recall for potential macro or micronutrient deficiencies; anthropometric measurements; calorie, protein and fluid needs; and an ADIME note.

SNAP challenge

For our community nutrition class we participated in a week long SNAP challenge. This simulates a household living on the USDA’s average SNAP benefit amount which provides a budget of $4.18 per day for food. This project created understanding and empathy for hardships of those struggling with food insecurity.

Body image in the bariatric patient population

For my body image nutrition class I studied body image in the bariatric patient population both before and after surgery. I researched motivations for the elective surgery, and studies on body image in this population. I completed interviews with patients and attended support groups to gather data on this topic.

Nutrition as part of oncology care for the whole patient

For my healthcare organization and management class I wrote a research paper and gave this presentation. It discusses the lack of medical nutrition therapy support in outpatient cancer centers and makes the argument for incorporating nutrition services into routine oncology care. I cited examples of the benefits for both the patient as well as the healthcare system as a whole.

Food and culture of the Czech Republic

For my cultural nutrition class I researched and developed a presentation on Czech food and culture which is part of my heritage. I presented on traditional food and drink as well as the culture and habits surrounding them. I took a traditional guláš recipe, analyzed the nutritionals and modified it to be more healthy. I also prepared the dish to share with the class!

Art and Craft of Vegan Cooking cookbook

I was an editor of the Art and Craft of Vegan Cooking cookbook produced by culinary students from the MSU department of Hospitality, Tourism and Events. I worked with the faculty advisor for this project to design, edit and format the completed cookbook prior to publishing.

For my nutrition and weight management class I wrote a blog on intermittent fasting. I defined the practice and methods; discussed the metabolic effects; looked at the potential health benefits and drawbacks as well as it’s viability as a weight loss strategy.
